It was originally called a "ball sack" of corn but some people thought that was racist against jews.

The word "ear" in some old language meant "a head of maize". So that's probably why it's called an ear of corn, it doesn't have any connection with the body part. It would be pretty cool though if our ears looked like husks of corn. We would all probably feast on each others ears though at that point, so it wouldn't work out very well.
